Having been pastry chef at the Hotel Matignon and Fauchon (with Pierre Hermé), Sebastien Gaudard absorbed his teachers' talent, then developed his own style. "It's all about interpretation," he admits. "When I have an idea, I run it past my team, but without giving too much detail, so each creates his or her own version. Then I pick which one to go with."

The Chef is perhaps today the most "authentic" of all Pastry Chefs

The new collection was presented to the press in Paris by the famous Pastry Chef himself, Sebastien GAUDARD at his "Salon de Thé - Patisserie des Tuileries" in Paris. It was on Friday October 9, 2015.

Among his new creations we can notice :
- 'Les Marquises', La Marquise d'or, la Marquise Bleue and La Marquise Blanche (Ice cream & crème chantilly).
- La Bûche Merveilleuse (Christmas yule log).
- The small and large Christmas Gift Box
- The White Iron Christmas Box (candies, Jam, gingerbread,...)
- The Avent Calendar (from German tradition)
- Pain d'épice figures (gingerbread)
- La Galette des Rois : Almond Galette and Chocolate Galette
- Christmas Jams (Orange with gingerbread flavour)
- Different styles and sizes of chocolate bars (in round and square shape boxes)
